Pod’s Simple Chicken Salad (Recipe provided by Pod)

  • 55g Mixed leaf

  • 65g pulled Chicken

  • 3 x (30g) Santos Tomatoes – cut in half

  • 30g peas

  • 7g Pumpkin Seeds

  • 1g chopped Flat Parsley

  • 1 x herb Dressing (a bend of mint, pepper, salt, lime juice, Dijon mustard, rapeseed oil, turmeric, golden syrup)

  1. Place leaves in a bowl

  2. Scatter over Tomatoes

  3. Scatter over Chicken

  4. Scatter over peas

  5. Scatter over Flat Parsley

  6. Scatter over Pumpkin Seeds

  7. Drizzle with dressing

WHY IT’S GREAT: It’s SO easy to make! And cheap for students. It’s also low in salt, sugar and saturated fat for those doing desk work with little time to get out and about to exercise. Only 215 calories.

 

Pod’s Berry and nut porridge (recipe provided by Pod)

  • 70g mixed blueberries, blackberries and raspberries

  • 3g toasted almond

  • 40g porridge oats

  • 45ml skimmed milk

  • 180ml water

1) Slow cook the porridge with semi skimmed milk until a smooth consistency

2) Top with the berries and almonds

3) Add natural sweetener such as honey or agave to quench a sweet craving.
